Since Emerson will be here on Tuesday, I figure this may be my last baking opportunity for a little while and I have been dieing for this cool and creamy, fruity delight. So without further ado, I give to you: Pineapple-Orange Sunshine Cake!
* In a large bowl, mix together:
* 1 box yellow cake mix
* 1/4 cup applesauce
* 4 eggs
* 1 can (11 oz) mandarin oranges in light syrup(syrup and all!)
* Mix gently and pour into a greased 9X13 pan
* Bake for 30-35 minutes
* Cool
For Frosting:
* Blend the following:
* 1 container (8oz) thawed Light Cool Whip
* 1 pkg. (3.4 oz) Instant Vanilla Pudding
* 1 15 oz can crushed pineapple in juice (I drain a little bit of the juice, but not much)
* Chill for 20 minutes or so
* Spread thickly on cake
* Keep chilled
Here's the greatest part: Each piece is only 212 calories, 3.6 grams of fat, and 40 carbs! There's no need to feel guilty sinking your teeth into this amazing fruity delight! Make it and enjoy! OMG! Last thrusday night I called my mom at like 9 pm and asked her if she would be willing to whip up some sunshine cake and drive it to my house. She said no and I tried to make myself feel better by eating a bowl of mandarin oranges topped with cool whip.

Haha! She said 'no'??? Doesn't she get the whole craving thing? ;) Make it and let me know what you think! (I have a confession though... I used regular cool whip, so mine probably wasn't as 'healthy' as it could have been...)
